An Agronomy Graduate in 1996, major in Plant Protection and specialized in Edaphology, I began my professional career working as an edaphologist, performing edaphic analyses throughout Greece. This way I got more familiar with Greek viniculture while I was introduced to many Greek and foreign vine varieties.

In 1998, after having thoroughly collected and recorded the data and pictures needed, and having gained the necessary experience, I cultivated my first vineyard in Nees Karyes, Larissa, in a 1.25 acre area, growing 22 different Greek and foreign varieties of vines for the production of white and red wine. The purpose of this undertaking was to explore the possibility of all these varieties adapting to the area microclimate.

In 2006, after systematically recording and analysing the qualitative characteristics of these varieties, and after producing single and mixed variety wine, I created a 6.5 acre vineyard with specific Greek and foreign vine varieties, with the aim of producing white and red wine.

In 2015 I proceeded to the construction of a new modern winery. The total area of vineyards is 80 ha. of which 30 ha. are private.

The result of this experience of many years, and of the long tests, is a high quality wine of organic management, with the distinctive name "CARYOS GΑΕΑ".

The Vineyards

They are located in New Karyes Larissa, a sloping land characterized as calcareous clay loam, with an altitude of 140m to 160m.

The microclimate of the region is characterized by heavy rainfall and low temperatures in winter, and high temperatures and prolonged drought in the spring and summer, which helps implement organic vineyard methods.

Since 2006, wine-growing is under the organic administration (certified by BIO HELLAS).

The planting density is 410 vines per 0.25 acre. and yields, from 2kg to 3kg grapes per vine. The total area of vineyards is 26 sq.m. divided into two plots of 2.5 and 4 acres.


Facilities

The winery is fully equipped with stainless steel fermentation tanks of various sizes, with temperature fermentation control , for both the white and the red vinification.

It includes the necessary mechanical equipment such as pneumatic press,labeling, capping machines and a fully equipped wine laboratory for the necessary analysis of wines.

In the basement of the winery aging barrels of a 225 lt capacity are kept (made of french and american oak), as well as the wine aging bottles.

CHARDONNAY OAK White 750ml

Varietal dry white wine

A unique "contact" where the oak elements embrace the primary floral and fruit aromas of Chardonnay.

The alcoholic fermentation takes place in French Ermitage 500 lt barrels where the wine remains for six months with the presence of vinolase.

It is distinguished by a compexity and an intensity on the nose where vanilla, nuts and smoke aromas combine with those of exotic and citrus fruit.

It has a balanced acidity, harmonized with the whole. A long lasting fruit aftertaste blends beautifully and sweetly with the oak.

RED DRY VARIETAL WINE

An exquisite four-year-old evolved red wine, of three varieties. Cabernet Sauvignon, Merlot and Agiorgitiko. Staying for two years in oak barrels and two years in bottles. It is characterized by intense deep scarlet color, with sophisticated and spicy aromas of ripe fruit and vanilla. Rich and full in the mouth with ripe tannins and long aftertaste. A noble wine with a rich character and flevor complexity. Drunk in 18-20 C served in carafe. The possible pressence of sediment is due to the natural way of clarity of the wine and its long-term ageing.

SAUVIGNON BLANC
VARIETAL WINE DRY WHITE

Shiny, crystal clear, slightly greenish shades and yellowish color.

A bold and rich nose, typical of this variety, with citrus, peach and melon aromas at the end.

A full taste in the mouth with excellent balance and finesse.

Its vibrant but elegant acidity finely complements the taste intensity and contributes to the long stay of the aromas.

VARIETAL DRY RED WINE

Agiorgitiko, Limniona

Wine of a deep purple color.

Aged for a year in oak barrels and kept in its bottles for one more year.

Its nose offers a complex and pure aroma of ripe red fruit, cedar, chocolate, caramel, with notes of spices at the finish.

With a rich body, intense and exuberant taste, balanced acidity and well-seasoned tannins that deliver a long aftertaste and a great aging potential.

VARIETAL WINE DRY ROSE
Agiorgitiko, Limniona

A rose wine that would like to have been born red.

It is produced with the combination of two distinct Greek varieties, Limniona and Agiorgitiko.

Produced by the bleeding process, where the grape marcs stay in the fermentation extraction phase for about eight hours, until the desired color potential is developed.

In rose color, with iridescent highlights. Its nose offers an aromatic palette of notes of cherry, wild strawberry, rose and butter caramel.

A wine with distinctive acidity and expressive aftertaste.

Vinification: Blanc de noir
Alcoholic Fermentation: Slow at low temperatures.

Black Muscat of Tyrnavos

It comes from sun-dried grapes of the Muscat Black variety, cultivated in the fertile and warm Thessalian land.

It is a wonderful sweet wine that locks in the sun and flavours, courtesy of its natural way of dehydration and its stay in oak barrels for two years.

A well-made dessert wine with an identity, with the typical name Melirros.
